Polysorbate 20 is manufactured by ethoxylation of sorbitan monolaurate with approximately 20 moles of ethylene oxide. The resulting non-ionic surfactant has a high HLB (~16.7).
This makes it excellent for O/W emulsification, fat solubilisation and wetting. Widely used in beverage flavour emulsions, ice cream, bakery and personal care.
