Potassium Polymetaphosphate (KPO₃)ₙ is a glassy, long-chain polyphosphate that functions as a powerful water-binding agent, metal-ion sequestrant and emulsifier in food processing.
It improves texture, juiciness and shelf life of processed meats, seafood and dairy products by binding free water and chelating calcium/magnesium ions. Also used in cheese processing and beverage stabilisation.
