Dried Chilli is produced by harvesting ripe red chillies, washing, and drying whole peppers in sun, solar tunnels or hot-air dryers to moisture ≤12%.
Standard varieties include Tianjin, Chaotian, Erjingtiao (China), Byadgi, Sannam (India), and Ancho, Guajillo (Mexico). Sorted by size, heat level (SHU), and colour (ASTA 80–180).
