Polysorbate 40 is produced by ethoxylation of sorbitan monopalmitate with approximately 20 moles of ethylene oxide.
With HLB ~15.6, it is a strong hydrophilic emulsifier for O/W systems, widely used in food and pharmaceutical formulations where palmitate-based surfactants are preferred for functional or regulatory reasons.
