Radish Red is extracted from red radish skin/flesh. It contains pelargonidin-based acylated anthocyanins.
It provides bright red-pink colour especially in acidic systems (pH 2-4) and has good heat and light stability due to acylation. Used as a clean-label natural red colourant in beverages, confectionery, dairy and processed foods, particularly in applications where strawberry-red or pink shades are desired.
