Sorbitan Stearates is a collective term for the stearic-acid-based sorbitan esters — Span 60 (monostearate, HLB 4.7) and Span 65 (tristearate, HLB 2.1).
Both are lipophilic W/O emulsifiers produced by esterifying sorbitan with stearic acid; the monostearate forms gels at use level, while the tristearate provides strong crystallisation control in fats.
